I created a high-protein, calorie-controlled nutrition plan (2300 kcal) for a client who could not eat onions or carrots and was sensitive to heat. The goal was to turn classic healthy ingredients like cottage cheese and oats into gourmet, functional snacks.
For cottage cheese, I made a chocolate-infused protein mousse to help the client stick to the plan.
I also developed cinnamon oat bars and chia seed puddings to manage pre-workout glycogen levels and keep core body temperature stable.
