Yogurt results from bacterial fermentation of milk. Bacteria used in the making of yogurt are called yogurt cultures. These bacteria ferment lactose-the sugar in milk-to lactic acid. The lactic acid acts on milk protein to give yogurt its texture and tangy flavor. The experiment aimed at observing the process of fermentation and the role bacteria play in the production of yogurt.
